The estate is home to beautiful olive groves, many of whose trees are well over a century old.
In 2009, we began the work of bringing them back to full production: we cleared dead wood, planted new trees, added pollinators to support the spring flowering, and cared for the grove entirely according to organic guidelines. Today, approximately 1,100 trees produce one of the finest extra-virgin olive oils in the region.

The Art of Organic Extra Virgin Olive Oil
Terra del Carmine Extra Virgin Organic Olive Oil is a blend of five varieties: Frantoio, Leccino, Moraiolo, Dolce Agogia and Pendolino, each one contributing something essential to the final character of the oil.
The colour is a beautiful fresh green, the aroma rich and fruity, and the taste spicy with a quiet hint of walnut, the acidity is kept very low. Our olives are harvested in the middle weeks of November and pressed within 24 hours, so that nothing of the freshness is lost. The result is a clean, vibrant oil ideal for fresh bread, salad or bruschetta.
