  • Platter of locally produced Umbrian cheeses and cured meats served with truffle-flavoured honey € 15
  • Delica pumpkin flan served with 30-month aged Reggiano Parmigiano fondue, chive and caramelized onion € 13

First Course

  • Sun-ripened garden tomato pasta, topped with silky confit cherry tomatoes and fragrant basil tips € 13

  • Calamaretti pasta served with Chianina beef ragù and 30-month-aged Parmesan fondue € 18
  • Wild duck ravioli served with beurre blanc sauce, orange reduction, celeriac chips, and fennel € 20

Main Course

  • Polenta served on a bed of 30-month-aged Parmesan fondue with Pioppini mushrooms € 13
  • Carmine farm-fresh seasonal garden salad (add €3 for each of: boiled egg, burrata, Norcia ham) €12
  • Slow-cooked pork fillet, grilled Cardoncelli mushrooms and brown stock € 20
  • Slow roasted leg of lamb served, chestnut honey, Jerusalem’s artichoke purée and seasonal veg € 22
  • Red wine braised beef served with garlic-sautéed chard, potato foam and a rich jus € 22

Since we first opened our doors in 2017, our goal has been simple: to bring together everything needed for a truly memorable experience. That means the finest seasonal produce from Umbria, the knowledge and passion of our chefs, sommeliers, and waiting staff, a selection of wines that showcase the best of our valley — all in a relaxed setting with views over the vineyards and the breathtaking landscape of Terra del Carmine.

Video description: our chef collects spontaneous herbs in the garden, and finishes the preparation of a dish by placing small purple flowers on top of an appetiser decorated with zucchini flowers. Meanwhile, the helpers in the kitchen prepare small meatballs for the filling of handmade ravioli.

About the team

Our chef, Jacopo Dominici, creates menus that combine the highest quality seasonal and local ingredients with creativity, precision, and a deep respect for Italian food tradition. He works with a young, visionary team that connects culinary technique with wine and nature.

Vegetables, herbs, fruits, and flowers come from our own farm and the local region. Every menu is developed in close collaboration with our sommelier team, ensuring that every dish and every glass tell the same story.
